My Father in law has PSP and is now on a soft diet but he finds his meals very boring. I wondered if anyone has some nice tasty meals that they could suggest to me? Thank you

Some ideas - Is this what you were after???
Gnocchi with a tomato sauce or creamy cheese or spinach and cream sauce, Zucchini and creamed corn fritters(wheat flour batter based) , Potato & spinach slice (& made with creamed cottage cheese & eggs), Potato and cauliflower soup (with cheese & chive cream spread stirred through), Homemade pizza- thick base (removed crust) with tomato & basil sauce with sweet potato and roasted capsicum (topped with garlic & chilli infused olive oil), Aborio rice cooked in chicken stock accompanied with steamed fish & shredded steamed brussel sprouts (lots of butter) , Paella style rice (tomato based) with white beans and small meatballs (prepared with 50/50 mince white bread mix & egg to create a very soft meat ball).
Yes - I enjoy cooking and make things up as I go along (& I have a pretty well stocked pantry)...

N.B. I tended to steer my husband away from dry cuts of meat (hence no roasts and BBQ's)
The dishes briefly described above are still enjoyed by the rest of the family. However for balance (I need to keep my weight in check!) our meals are accompanied with an even proportion of salad items.
Mum's taste changed slightly and she was banned from eating lettuce and rice as they became a choking hazard. But she rather liked things like cauliflower cheese, tuna and pasta bake (this can be minced down for ease of swallowing) and had a craving for ice cream. Sandwiches were her favourite thing in the end but they needed to have very moist fillings such as Tuna and mayonnaise. I think one reason mum's taste changed was that before we stepped in to help she had found it increasingly difficult to stand long enough to cut and slice stuff herself and had been having a lot of spreads such as cheese, lemon curd, chocolate spread and jam. Once she allowed us to help she rediscovered things like cheese, corned beef etc and soft pasta based dinners. She didn't enjoy beans, peas or things that needed manouvering round her mouth or picking up on her fork anymore and also found things like fruit too tart yet they had been her passion before. When mum went into the nursing section of the care home and had to have pureed food when she had poorly patches, the cook was always careful to puree the items separately so that the food kept its own flavours and could be identified.This also kept their textures better and that can make a difference. Another thing to be aware of is that eating is very much a labour in the end so whatever they are eating may seem boring to them-it's not necessarily the taste but the effort of eating.So try not to worry too much about this.

Have a look at Wiltshire Farm Foods - they do a wide range of ready meals which are delivered free of charge.
They cater for all types of special diets from gluten-free - vegetarian - soft and pureed. They also do smaller portion sizes for those with small appetites and "hearty meals" for those with a slightly larger appetite!!

Thank you everyone for your ideas and suggestions! I too have been struggling to make dads meals a little bit more tastier and provide a bit more variety as he has begun to find the usual meals boring and bland. Thank you.
