Lunch: Gluten Free Macaroni and Cheese with Tuna and Carrots

This is what I had today for lunch. It’s leftovers from dinner a few nights ago. It was really good and the flavors blended together very nicely. The shredded cheddar cheese melted and got a little stringy— which is good, too. The macaroni is gluten free elbows.😀👍🌈

We do. I'll check them out. I always like getting recommendation from others. So far, I have enjoyed the brands that use brown rice flour.

They are now saying that leftovers are better for the gut than freshly made food. Apparently, chemical changes occur which are beneficial to the colon. I deliberately make leftovers now (if that makes sense). Bon appetit! Bx

Thank you for the great information! I didn’t know that leftovers were better for the gut/health. I will have to let my parents know that when we have leftovers, again soon.😀👍🌈

More information for anyone with sloppy stools. Use potato starch to tighten them up. It’s ridiculously cheap and is tasteless. Available in health stores. Good in soups, stews, yoghurt, puddings and even ice cream. NB. Put it in a different container because it goes all over the shop if you keep it in the same packet. Apparently, it reaches the colon without being adulterated by the stomach or small intestine. Con amore Bx
