This is a loaf of gluten free bread that my Niece helped bake today. It’s really good and we will have some for dessert tonight with dinner. We may use some of the bread for French Toast or on the side with scrambled eggs this weekend coming up.

Here’s the recipe. It comes from a bread mix.

Gluten Free.

SERVINGS

Ingredients

4 cups Gluten Free Cinnamon Raisin Bread Mix

1-1/2 cups Water

1/4 cup Oil

2 Eggs

2-1/4 tsp Active Dry Yeast

Instructions

Baking Instructions by hand:

Preheat oven to 375Β°F. Dissolve enclosed packet of yeast in 1 1/2 cups warm (110Β°F) water and let stand for 5 minutes to foam. Have all ingredients at room temperature.

Put dry mix in large mixing bowl (preferably use a stand mixer). Add eggs, oil and yeast-water mixture. With mixer on low speed, blend all ingredients until smooth. Turn mixer to medium and beat 15 seconds or until mixture thickens slightly. Pour into generously greased 9 x 5-inch nonstick pan. Smooth top of dough with wet spatula.

Cover pan with plastic wrap and put in warm place (75Β° to 80Β°F) to rise for about 40 to 45 minutes or until dough is level with top of pan. Bake 60 to 65 minutes or until internal temperature of bread reaches 205Β°F, covering bread with foil after it starts to brown.

Remove pan from oven and cool bread in pan for 5 mintues. Remove bread from pan and finish cooling on wire rack. Cool completely before slicing.

Bread Machine Baking Instructions (1 1/2lb loaf):

Remove yeast packet from package. Have all ingredients at room temperature. Follow your specific machine instructions for adding yeast, liquids and dry ingredients in the proper order. Be sure to whisk together the water, oil, and eggs together before adding to bread machine. Set controls for setting recommended by manufacturer, or use a cycle with a 10 minute mix/knead, a 60 minute rise, and a 90 minute bake (or until an internal temperature of 210Β°F has been reached). Only one rise is needed for gluten-free breads. Remove carefully and cool on a wire rack.

I've purchased premade gluten free raisin bread and it was OK - don't recall the name think it started with Y? Like Yudi or Udi?

But to have a gluten free bread cooking in your own oven with the wonderful fresh bread smells that would be something!

There's a few gluten free bread brands that I get every few weeks if it's possible. This is the first time I had actually gotten a bread mix that was gluten free and didn't use a bread maker machine to do the baking. It was mostly done with bowls, a microwave and the oven-- and my helper-- my Niece. :-)

It was cut in the middle so we have a whole half that wasn't eaten! Very small slivers were tested for snack today so we would know if we wanted to use it for later tonight. :-) My Niece took one piece for sampling since she helped make it. :-)

She did! Unfortunately, she can't come tomorrow since we are getting a dryer repaired, so we won't be able to give her any other pieces unless we have some for Monday at our lunch time.
