A New Quiche!: Dinner

Hi everyone,

This is a new quiche I had for dinner tonight. It’s made with quinoa, brown rice and Mexican 4 Cheeses. I had a side salad with Blue Cheese dressing and frozen mango chunks. Really great and I will have the leftovers for lunch tomorrow afternoon. The entire meal is 46 carbs..

I am in a library zoom group where we bring virtual desserts to the meetings. I hope you don’t mind my trying to bring yours, it looks so yummy even if it is more of a meal.

My library zoom group met today & I virtually posted your meal. They said it looks tasty & want me to make for them after the pandemic! Did you post the recipe/instructions elsewhere, or is this a family recipe? If not I'd love to be able to make it along with Sky_Writer.

Wow! That's amazing to hear about the quiche! Thank you for letting me know. It's not a family recipe, but we did change it slightly because we used rice for the crust so it would be gluten free/no wheat. Do the members of the Zoom group eat gluten free? Would you be okay with me sending you the recipe on private message? :-)

I am on a gluten free meal plan but don’t know if the others are or not. I would very much appreciate your trouble messaging me this recipe. I will reciprocate with a Southern California recipe I’ve enjoyed over the years.

Good morning that looks and sounds really nice and very healthy I have yet to try quinoa but keep meaning to and I love quiche and cheese so when I can get to shops again I will get some hope you have a good day xx🌞

Thank you, Hidden ! I really appreciate that very much. There are different types of cheese you can use. Some quiches I've had had been cooked with Swiss or Provolone. This is the first time trying to use the Mexican 4 Cheese blend type. :-) Not sure what to have on the side with it for lunch, but we'll see when the time comes. :-)

Hello I recently bought a blend of cheeses in a block I can't have extra mature cheddar although I have had a tiny bit sometimes as of a problem I had with suspected bacteria a specialist told me. Did you see my scarfe post I think it is cotton I'm not sure you can tell from picture kinda brushed it is very warm and havnt needed it passed few days xx😊oh I don't like blue cheese I think my favourite is the Xmas one cranbury the trouble is i find cheese more addictive than any other food so I will only buy a little and smoked cheese I love well my mind's on cheese now lol 😋I'm having a vegetarian sasag roll for tea my mam made yesterday not sure what with yet i will help her bake at Xmas whilst pixie guards the oven lol 😻xx

It was really good! I can't wait to see how it is at lunch today after all the flavors blended together over night in the refrigerator.

Yes Leah some foods are so much tastier when they mature a little bit! 😊

That looks so good Leah, I'm loving the look of the crust as well. I could easily veganise that one 😋🌈👍
