Coconut, Honey, Raisins & Peanut Butter ‘Rice’ Balls (Picture)

Hi everyone. These are gluten free and are made with my Niece’s help (we did them yesterday after lunch ( Thursday)). We test tasted one each and they were/are really good! The coconut is shredded and unsweetened. You roll the balls in the coconut before you put them into the refrigerator to get cold and thickened up. Put honey, rice crispies, raisins and the creamy peanut butter in the bowl and mix all together before using the coconut shreds. Use a separate container for the shredded coconut and start rolling each ball in it to cover them as much as possible. Repeat the rolling each time. There can be 16-30 balls total and take 1 hour and 15 minutes for it to be done cooking. Enjoy!😀👍🌈

These look yum! I'm allergic to raisins but I could substitute them for dried cherries and almond butter instead of peanut butter. They would be an alternative to a Bakewell Tart. Thanks for recipe, Leah.

Ooh they look and sound delicious, I love unsweetened shredded coconut, I use it a fair bit. I also love peanut butter.🌈😋😊

Enjoy! You just need a few bowls, measuring cups, tray with wax paper and the ingredients and spoons for mixing.😀👍👍🌈

They look delicious. I am going to make them with my granddaughter at half term. I might be missing something but where does the cooking come in? I presume they just need an hour in the fridge.

That's right. You mix everything together, roll in coconut or what you want to substitute the shreddings for and then put them in the refrigerator 1 hour and 15 minutes ( add another 15 mins. if necessary) then enjoy when you want to eat them. :-)

Those look so great . Cooking is not my forte that looks like something even I can have I'm going to ask a dumb question you mentioned cooking does that mean baking and at what temperature I don't see that in your instructions. Can you use a sugar free substitute or would that alter it too much?

You could try sugar free items. There's no heating up anything. Just mix and roll in coconut (or substituted items) and then put in the refrigerator. Comes out really good! :-) I'm type 1, so I'm very careful about the carb. counting for each meal/snack and/or treat I have during the day/evening. Thanks for asking! :-)

Thank you, bobbybobb ! They were even better last night with dinner. The peanut butter (creamy) was helpful since it had the protein part of the snack. The shredded coconut was unsweetened, but still works well, too. :-)

Those look like a delicious sweet treat Leah, but with some quite natural ingredients. I shall give those a try.

Yes, they were really delicious and even my brother liked them. The best part is, if you don't want to use coconut or some other part of the recipe's ingredients, just substitute and add what you want. My parents didn't want the coconut for their rice balls, so they used cereal that I don't eat since that one has wheat in it. The rest were gluten free. :-)
