Made strawberry cake for great niece's birthday in garden yesterday. She has diabetes 1 so everything very low sugar. Everyone said they couldn't tell, so it was a success. πŸŽ‰πŸ‘

6oz self raising flour

6oz sugar substitute or similar

6oz softened butter

1tsp baking powder

3 eggs 1tsp vanilla essence

Mix everything together for 1 minute. I use hand held mixer. Don't overbeat

Put in 2 greased loose bottomed 8" tins with bottoms lined with greaseproof paper. I pressed strawberry halves in top on one layer round edge but you could put them all over.

Bake for 35 mins in middle of preheated oven at 150 degrees fan oven. Test with knife, should come out clean when cooked. If not, bake for another 5 mins. Let cool before tipping out

Butter icing;

Mix 2oz sugar substitute (I powdered it in liquidiser to create icing sugar) with 4oz softened butter

(or use whipped double cream instead)

Spread layer of diabetic low sugar strawberry jam on one cake followed by creamed butter icing or mix the two together for filling

Put other cake on top with indented strawberries showing.

I added extra sliced strawberries on top to make it look pretty.
