Per my Renal Dietitian legumes are out of my meal plan due to the high potassium and phosphorus count. I did have some research come across my computer in-box from The Journal of Renal Nutrition last year. I've included the link here for you to review and decide.

Thanks for this info. Im at a loss as to how to get sufficient protein on the "once a week" meat/fish meal diet. But, i don't want to overdo potassium and phosphorus. I guess ill search Devita recipes to see what's there. This "once a week " meal/fish diet comes from my nephrologists office/center. Im probably have to go a private dietitian with my lab results and have a meal plan made up. I was just waiting for my lab results to hopefully improve. Had a hit on them after having a month long debacle from medication side effects. Phew...im on the mend and hope the numbers improve.
Its so hard to break old cooking habits, but i will once i can get some enjoyable recipes.

You might go to eatright.org for an RD. Once you open the site, go to the red box in the upper right-hand corner and you'll enter your zip code and get a list of dietitians in your area. If an RD isn't available check on the registered dietitians for one who is also certified "renal friendly."I haven't heard of the "once a week" meat/fish diet. I have seafood 2 or 3 times a week and poultry three or four times. No red meat at any time. I'm not into vegan or vegetarian recipes. I eat a lot of vegetables but to eat only veggies wouldn't be something I could stick with.

Your diet sounds great. I've been eating a lot of fish [cod, flounder] and shrimp. Never eat red meat, but I do eat some pork and chicken. I thought that the "once a week" meat/fish seemed drastic, but someone the other day on the forum mentioned doing it, too. So, I guess its out there. I've located a few dietitians that are in nearby cities, but with covid, I'm reluctant to travel there at this time. However, I will try that site you mentioned, too. Right now, I'm limiting animal protein but not giving it up completely. Again, thanks for your kind advice. Its so nice to have the support and concern from others.
I just used the dietitian's site you provided and found someone who only does consultations through telehealth and my visits would be covered under Medicare. I'll need a referral from the kidney doctor and I'm working on that now. Yay, Yay I'm on the way to more healthy eating. Thanks again.
After my first two visits with my RD, we only communicate via phone and e-mail, so telehealth should be okay. Just fax the person your labs. I let her know when something is out of the reference range and if she wants me to adjust the meal plan until the next lab. I've gotten pretty good at anticipating her suggestions.Also, white meat pork is okay on the occasional recipe if you're in Stage 3 or better.

I just moved into stage 4. I will pass along any information that comes my way. it may take awhile to get with the dietitian as i have to email my kidney doctor a referral form for him to fill out and return to me, But, once I get any information, I'd be happy to list it on the forum. I really wish others would put some recipes that they enjoy on the site so others may copy them. I bought several renal diet recipe books and actually didn't find many recipes I would enjoy. I did get a great tip from someone here in the community a couple of years ago. I mentioned, in passing, that I missed having pizza. She posted that I could substitute a pita instead of dough and instead of tomato sauce I could puree a red pepper and it worked great with the pita and some mild cheese, like brie. I don't have it often but it's a great change of pace and safely goes with my meal plan.
I'm trying not to admit that I miss pizza. Thanks for the tip. Hoping others share some recipes so that we all can avoid some food boredom.
Thanks Mr_K for the good link. I too have to limit my legumes due to high potassium. I sometimes substitute leeched beans for meat, and have my good New Orleans dish of Red Beans and Rice. I substitute chick peas sometimes. Tracking my diet helps me do this.
Thanks for the advice. Where can i find that New Orleans recipe for beans and rice. Can you private message me if you don't want to go public with it. Although I've cooked all my life and did well, I rarely used legumes. So, its a whole new life. Thanks again.
Thanks for insurance suggestion, but im staying with what I have now because my supplement to Medicare is very good and from many years of employment

I do it simple and get canned beans and wash out the sodium and simply cook them , make rice and put in the beans. Add spices to taste. You can take dried beans and soak them overnight. Some people add celery, bell peppers and some tobasco sauce (not for me anymore) I used to live in Cajun country.
What stage are you? I don't tolerate legumes at all, except peas. I can eat very small amounts, 1/4 of a cup or less of other legumes. I eat only 3 to 4-ounce portions of good quality meats.
