Plant Based Food Recommendations

For those that follow a plant based diet, can you give me recommendations on what you eat for breakfast and for lunch? Cookbooks and Web sites would also be helpful. Plant based is very new to me, recommended by my dietician. I am Stage 4 and Type 1 diabetic.

Davita has a lot of kidney friendly recipes and can select the one for CKD non-dialysis. As far as modifying diet to plant based, check with your Doctor and/or renal dietitian so can get diet that will work with your CKD level 4 and diabetes.

My favorite breakfast: cooked quinoa mixed with seasonal fruits. I am not a happy morning person so I like to pre-make my breakfasts. Every few days I make a new batch; cook a cup of quinoa (would be about 4 servings) and cut up the fruit. In my current batch I have blueberries, strawberries, nectarine, apple, and orange. All are local and at the peak of ripeness (except the orange). It's good to have at least one citrus fruit in the mix. My previous batch included fresh apricots - heavenly! Mix your fruits with the cooked quinoa and sprinkle with hempseed hearts. Keep in the refrigerator.

During the cooler months I like oatmeal made with oatmilk and mixed with peanut butter. I make a 4-5 serving batch and keep that in the refrigerator, as well.

A common lunch is homemade hummus which I use as a dip for raw veggies: cut-up red bell pepper, broccoli, cauliflower, celery, cucumbers, etc. If I'm extra hungry I'll spread some hummus on a soft tortilla and roll it up. I also have a recipe for "vegan ranch" that I love to use as a dip. It's made with blended cashews so you get a bit of protein.

Hope this helps with your meal planning. I want to point out that, while I have CKD I do not have diabetes so am unaware how that might impact your choices. I've been vegetarian/pescatarian for decades and vegan for less than a year.

Good advice, though oranges and apricots would be off limits to someone with a potassium restriction.

Hi, I'm also type 1 and am peritoneal home dialysis (PD) I eat a WFPB diet for many years (WHOLE FOOD PLANT BASED) for breakfast I always eat a large bowl of oatmeal with banana, flax seed powder, some soy milk, strawberry and blueberry then I'm set for the day. Hello, I have type 1 diabetes and at stage 3 b up from stage 4 ckd. For breakfast I usually eat 1/4 cup of steelcut oats with either apples or berries. I add unsweetened applesauce and freshly ground flax seed. Lunch I have a big salad with lots of leafy greens, red bell peppers, onion, celery, carrots, apples, cucumbers, beets, broccoli and 1/4 to 1/2 cup of vegetable protein like black beans or quinoa etc. As far as recipes, I look for wfpb on the internet and tweek to my particular needs. It has been very difficult to follow any particular diet due to all my different health issues for sure. I have been able to bring my GFR up and my creatinine down with eliminating everything animal.

Hi Trix,

Different things work differently for different people depending on labs etc. so I agree with Orange City to check Davita or with your dietician.

For me.....

I generally rotate between several things when I am home as I am on the go:

Always/ home and away: 1/2 cup ( about 2 tbsp ) of Greek Yogurt with Organic Black Chia Seeds and Flaxeed as per my nephrologist.

Home:

Any of the following:

- Cream of Wheat ( yellow box 110 calories 0 sodium ) made with water. I don't add milk, sugar or artificial sweeteners. I may add some fresh blueberries or strawberries, though. High in iron.

-Gluten - free Quaker Oats which is cooked in the microwave- (no packaged oats )with fruit.

- 1/2 low carb bagel; plain, wheat or multi-grain with either Benechol Lite or plain hummus.

- English Muffin or light wheat toast with hummus.

- Fresh fruit consisting of blueberries, strawberries and raspberries.

- I generally have a small amount of either iced coffee, or small cup of hot coffee with Coffeemate Fat Free Original Creamer in it.

( I boil water for 2 minutes in the microwave and add in the powder, stir and chill)

Before the Covid set in, if I was meeting friends for breakfast, I would eat my yogurt prior and order an English Muffin, bagel, light wheat or rye toast and have a bit of butter on it or just a fruit cup and an iced coffee.

(I take my creamer with me in a small vitamin bottle.)

People do make an egg white omelet with onions, peppers and veggies, but I have been away from it so long that I don't miss it.

Hope this helps, but I would check Davita as they have a much more diverse selection and outline calories and nutrients for you.
