I am 12 stone and have been going to the gym for 7 weeks, my weight hasn't changed but I can notice some difference. Think it's my diet that is holding me back so am hoping that this plan gets me on track. Any advice or tips would be great

It's great that you've been going to the gym and it's now become a routine. Going to the gym will definately have made a difference even if the scales don't say so. Have you taken any other measurements? It may be good to keep a track of how many inches or cms you've lost in places. Exercise burns fat but it also builds muscle. Muscle weighs more than fat but takes up less space so you may weigh the same but look more shapely and toned.
In terms of diet, make small manageable changes. You've got yourself into a routine with exercise now you can do that with your diet. Go to the nhs bmi checker and input your details it will give you an idea of how many calories you should consume each day. I use myfitnesspal website/app to log what I've eaten and drunk each day. If you log for a week before changing anything then it should give you some insight into how balanced your diet currently is or what your portion control is like,
Make small changes then. I discovered I was drinking way too much squash and whilst it was better for me than full fat coca cola it wasn't ideal. So I cut down on it and swapped it for water. My diet hasn't changed drastically I've just made my meals smaller and made sure I eat more veg and less calorific sauces or sweet treats and because I log everything I know what I'm consuming and what it all adds up to both in calories and also the amounts of different nutrients I need.
I have but not changed what I eat much but portion control has been my key as well as planning meals & not getting too hungry.
Using smaller plates also helped me. As well as the gym have you looked at c25k - its brilliant.
