Mix a large egg with a tbsp almond flour and fry gently in a blob of butter for about 3 mins each side. Here I've served it with some Greek yogurt, toasted nuts and seeds and three sliced strawberries. Keeps me going for hours 🍓🥚

That looks so good I just tried to make one. Hadn't got any almond flour, so used coconut flour instead. But I ended up with more like a biscuit. Still quite nice though.

Perhaps add moren or less liquid next time (not sure which one as don’t know how much you used 😀). But coconut flour does take more liquid than other flours, or so I’ve read.
I didn’t use any liquid, what liquid? Water?

Hi Cyrtis and I havent tried making them with coconut flour myself, but a large egg and a tbsp of ground almonds works for me every time!
I'll have another go.
The coconut flour recipe I have separates the eggs so you beat in the yolk & fold in the white. Very nice but a faff.

I have tried this, and it was lovely! My egg was huge, so it spread more than in your picture. Really enjoyed it - I will do it again, and it is easy enough to remember, rather than having to make notes of a recipe!
