High good fats, such as those from nuts & seeds.
Low carbohydrate, limit foods such as bread, potatoes, pasta.
Look up foods with resistant starch.
It is exactly what it sounds like: substituting dietary fat for carbohydrates.
Your body has no actual need for carbs, but it would be a boring diet that had none! There are many types of LCHF diets, with the very-low-carb diets aimed at weight loss. Most people can maintain a healthy weight at 50-100g/day carb content, which is about one-third of the recommended level.
The NHS still insist that fat causes heart disease, but after 50 years of looking nobody has found any evidence that this is true (you'll find that they use weasel words like "there are concerns that saturated fats lead to ... " instead of "there is strong evidence that..."). Your body NEEDS fat; it doesn't need carbs.
I suggest buying any book by Phinney and Volek. Not only do they offer good diet plans, they explain the science very clearly.
