Victoria Sponge....healthy or not i dont care...

Today i made a Victoria Sponge for the first time in over 4 years, and before i was overcome with bereavement i used to make dozens of various cakes to give away.

I am so glad i am now getting my mojo back,and getting my cooking hat on again as it's something i actually find relaxing.

However, my Victoria Sponge is well risen and once cold i will sandwich together with apricot jam and whipped double fresh cream.

Sometimes how you feel is more important than whether something is as healthy as usual. Getting back to doing things you used to enjoy is so important after bereavement, and it isn't as easy as you might think - so well done. Enjoy your sponge - it sounds lovely!
