This afternoon, I had gluten free waffles, extra crunchy peanut butter and a Greek blueberry yogurt for lunch. The carbs. before the yogurt were: 59. The carbs. with the yogurt were: 63. I enjoyed everything and the entire meal was delicious. This is one of my favorite meals to have for a Sunday lunch.

I do love waffles!! That whole meal sounds very good! For some reason, I don't seem to put peanut butter on many things - yet I always have a small jar of it...I will eat a spoonful sometimes if I feel low on energy. Do you make your waffles yourself?
