Stuffed Cabbage, Blueberries and Lemon Jello: Dinner

Hi everyone. This was what my Niece had helped with yesterday after lunch for today. We did Lemon Jello as a snack/dessert. We had some this morning. My parents and I had some for dessert (left the rest for Monday when she comes back next week) tonight. The Lemon Jello has sugar, gelatin and lemon juice.

The rest of the dinner tonight was stuffed cabbage with rice and meat, salad with homemade thousand island dressing, fake bacon bits and fresh blueberries. Everything was really good and it was 91 total carbs. with the jello.

That sounds really tasty but quite unique if you don't mind me saying. I've often wondered what fake bacon is made from. I had it at a wedding once, it was called Fakon or something like that? It was different to me as I am a meat eater but nice to try these alternatives to meat.

It’s soy bacon bitsβ€” not real meat. The meat is real in the stuffed cabbage with rice.

The jello was in a heart shaped mold and got its shape in the refrigerator over night into this morning.

The blueberries were really good with the jello on the side.

I do love fruits with jello too. Sometimes what I do is mixing them all together with jello. πŸ˜‹

Homemade thousand island dressing is definitely tasty and much healthier than from a bottle. πŸ˜‹πŸ˜πŸ‘

Lychee is one of popular tropical fruits. They sell fresh ones in Whole food, Asian markets. I think the canned ones are carried by some other supermarkets.

That sounds good. I was trying to work out what jello was & I realised it was what we call over here in the UK Jelly . My favourite Jelly I have to say is strawberry

Strawberry jello/jelly is good, too. We have a few other flavors that we still want to try out in the next few weeks. :-)

what you call jelly is what we call jam -& we put it on toast, bread -i used to like it in rice pudding & semolina as a child

I had the blueberries as a snack on their own and the cabbage was with sweet potato, parsnips and carrots and green cabbage as well and with a cooked tomato and steak.

Tonight we had red and green cabbage combined along with sweet potato and ham which we really enjoyed for our dinner.

This sounds really good! I enjoy eating cabbage and sweet potatoes, but we haven't had a chance to get any sweet potatoes recently. The closest to a sweet potato that I had gotten was when we ordered a box or two of gluten free crackers that have the sweet potato flavoring baked in into it. Goes really well with hummus and used as croutons for a salad now and then. :-)

Jello's so lovely to eat in hot weather isn't it? Especially the citrus flavours. I love the lime flavour too. I haven't eaten stuffed cabbage leaves for a long time. Maybe I should try it once more. It was quite a popular dish in Germany I seem to remember, when I lived there years ago. A really nice dinner for you and those fake bacon bits are great. They really do add a bacon-y, savoury flavour to things!Last night I had prepped for terikayi salmon with vegetable rice. At the last minute I really didn't want to eat fish, so while I gave that to hubby I decided to pep up my rice with a handful of dry roasted peanuts which was a very simple meal but really enjoyable.

Yes, having jello in the Summer months is a really nice idea and so refreshing with the different flavors and the interesting colors each flavor has when cooked/prepared. It's my third favorite Summer treat to have after frozen fruit and ice cream. :-)

No problem Leah... This evening I made minced beef pinwheels from a sheet of ready made puff pastry on top of which goes a layer of cooked minced beef, well spiced with curry spices and seasoning), then it's rolled up and sliced into the pinwheels and cooked in a quite hot oven until browned and crisped and we had those accompanied by new season potatoes of a particular kind which are only grown on the island of Jersey here in UK and called Jersey Royals. They are an early summer treat as the season for them is quickly over but they have a very special flavour. And with those a salad of lettuce, onion, vine tomatoes, avocado pear and bacon pieces. There were leftover pinwheels but they seem to have vanished in my husband's packed overnight meal which he has taken with him to work tonight!What are you having, (or did you have) today?

We had hummus with gluten free crackers, salad, feta cheese, fake bacon bits and dressing, grape leaves stuffed with rice and Greek yogurt for lunch today. Not sure yet what will be done for dinner tonight, but will post later if there’s time.

The beef pinwheels sound really great! I like potatoes for side dishes.πŸ˜€πŸ‘
