Hi everyone. For dinner tonight, I had a gluten free bagel with liquid egg and cheddar cheese melted together. I also had pineapple Greek yogurt and fresh blueberries for dessert. The meal was 68 total carbs. and had a lot of protein. The picture will be on the comments section.
Stay safe, happy and healthy!ππ

It was really delicious and very healthy, too.πππ₯―
That looks and sounds pretty good Leah. You are a wizard with limiting carbs and staying gluten free!We had Lebanese rice and lentils this evening. I had mine with plain Greek yoghurt but hubby had his with some sausages on the side! It's a really simple dish done with about a 50/50 mix of rice (and I always use basmati), and green lentils. This is flavoured with plenty of cumin (jeera) and I always add a little more heat too, with some red pepper flake, and it's topped off with fried onions. One of my favourite quick meals!
Thank you, Sue. I really enjoyed it and it was my first time doing the melted cheese with liquid egg and bagel for dinner. Itβs a new idea for us.πππ₯―
Your dinner sounds really wonderful, too! Glad you enjoyed it.πππ
Hi Leah,
This is very creative how you prepare your bagel and fun dinner. ππ
It looks so good and healthy that I could make something like this for my lunch/dinner. π
Love berries and the Greek yogurt with pineapple flavor. ππ«β€οΈ
I bet you enjoy it very much and thank you for sharing with us! πππΊ
Youβre welcome, Koko! I really enjoyed it and glad it worked well for the first time doing this type of meal. I will have to try to do it again sometime soon for another weekend meal.πππ₯―
Oh it was your first trial and it turned out great! πAbsolutely, it is totally fun weekend meal. Thereβs this place called Einstein Bagels and they make perfectly fresh bagels with different kinds like herbs, sesame, egg, cheese bagels...πππ₯―
Hi, I know there's no agreed definition of 'healthy eating' here, to allow for different approaches, but I always aim to have some veg with every meal.
Liquid eggs are less cholesterol and anyone can use them. I use the liquid eggs to do a lot of the baking/cooking. I use hard boiled eggs and Greek yogurt for breakfast every day.
