Gluten Free Homemade Cheese Blintz: Dinner

Good evening/morning/afternoon everyone.

This is a homemade gluten free cheese blintz with ricotta cheese, egg whites, raspberry jam and fat free margarine. We had ice cream for dessert and the entire meal was 54 carbs.. Really great taste and we plan to do this again soon.

Hey this is a really interesting recipe Leah, it’s a great combination ricotta cheese with raspberry jam, so I bet that you really enjoyed it. 😊

Yes, the ricotta cheese and the raspberry jam together went really well. It reminded me of a crepe after the blintz was done frying/baking in the pan on the stove. I can't wait to try to do another blintz in a few weeks from now. :-)

It was really delicious and looked a little like a bigger and 'dessert-like' omelet. :-)

I had cheese for lunch too. Seemed to have a few things needed eating up so made a goat’s cheese salad using the leftover half pack of soft goats cheese with different salad leaves that were lying around, cucumber, cherry tomatoes that needed eating, celery, peppers, some beetroot in a horseradish marinade that needed using up, walnuts and balsamic vinegar. Really quick to make and a great filling lunch. Hint of horseradish really worked. I was very generous with the walnuts so it came to about 15g carbohydrate. And it was all vegetarian and gluten free too.

Need more left overs so I can make it again.

Wow! Your salad looks and sounds fantastic! I use horseradish for when we eat gefilte fish with our meals. The one we use is red colored-- more mild in spice.

I love walnuts and a lot of different types of cheeses to add for salads. We sometimes add shredded/mixed cheeses and along with tuna or salmon for the protein. The dressings are varied depending on what is leftover/what we don't need to order for the next week. Lots of flavor and very healthy. :-)

You're welcome! I'm glad you like the pairing for a blintz and ice cream. The blintz looked like a bigger crepe/omelet. I had some ice cream called Trio Chocolate for dessert and it went well taste wise together. :-)
