This dish is a bit like lasagna without the pasta and the mince. It does have some anchovies in the sauce so isn’t purely vegetarian. I’m not a fan of anchovies on pizza but they really add to the flavour of the sauce.
It is simple to make and freezes well too.
I served it with salad last night but it also pairs well with mash potato and steamed veggies.

Ha ... what a coincidence, I just suggested to another poster (before seeing your recipe) that they should try this. I'm not vegetarian, but I do eat a lot of vegetables, and this dish is one of my favourites. Whenever we go to an Italian restaurant I always check to see if it's on the menu.
