Rainbow stir fry

I signed up for a weekly veg box last month, so I'm coming up with lots of ways to use the veg. Tonight was a lovely rainbow stir fry :) so colourful I just had to take a photo!

If anyone has any ideas how I can get through 30 onions, that would be great :D

That looks yummy.

How about freezing the onions, that's what I'd do and then you can use them as and when you want.

I've considered freezing, but the veg box seems to come with onions every week, so I don't know if I'll ever use that many.

Under normal circumstances I'd offer them to neighbours. Maybe I still will!

They've suspended substitutes just now, but maybe I can opt out for a few weeks when life settles down again :)

Can you tell me how you freeze onions?

You just either slice or chop them up, place them on something flat i.e. a large chopping board, open flash freeze them i.e. just place them in the freezer once they are on the board and leave them to freeze. Just bag them up once frozen, it's that simple and saves a lot of waste and time for when you need onions again

French onion soup and freeze some of it. Onion tart. Onion chutney. Onion bhajis. Creamy baked onions. Onion rings. Caramelised onion and bacon tart.

Great ideas! I might try my own caramelised onion chutney :) if I mess it up, I have loads spare!

Chop, fry and freeze in small bags. Use as and when you need.
