Vegan butterbean spicy Hot Pot as today is World Vegan Day πŸ’š

β€’14 Replies

Hello everyone, here's what I cooked for dinner tonight, its a hot pot with butter beans mushroom tomatoes onions garlic sliced organic local potatoes mixed stir fry veg (from the freezer) with quinoa and red lentils which's one of my favourite combinations. I added dill ginger coriander cumin turmeric black pepper chilli and some yeast extract.

It is gluten free and plant based and I enjoyed it very much.

Today is World Vegan Day to kick off World Vegan Month its also 75 years since the Vegan society started and I don't think anyone expected the amazing growth of recent years so here's a link:

Enjoy your Friday evening folks.

Funnily enough I had some Butterbeans this week and I haven't had them in ages. ;)

I loved them since childhood. I loved sweets and chocolates when I was a child but they were a special once a week treat then, shame it's not the same now, but I always loved fruit and vegetables, my mum had no problems getting me to eat all my food.πŸ˜€

This all sounds great to me and you are so right about treats and being brought up on real food.

I remember when simple things were a real treat and now we have easy credit and instant gratification, if that is what it really is...

Your mum did a good job bringing you upon thats all I can say Alicia. πŸ˜€

Yes I think sweets, cakes etc are far too readily available now they should be treats.

I know what you mean by instant gratification, this is what lots of people expect on social media, it's sad times when you fret if you don't get enough likesπŸ€”

Thank you, my mum and dad were awesome parents, I miss them every day but the love I have for them will never go away.

Have a fab evening.πŸ˜€

Wow, lovely meal - full of beans - delicious! :-)

Thanks Zest , sounds like me full of beans...😊

Yes I agree it's about making choices.

It seems to be today that people are relying heavily on processed fast food which isn't good.

Yes occasional cake or something sweet doesn't hurt and yes with a meal.
