There were lovely looking mushrooms at the market today so I decided to stuff and bake some for dinner. The stuffing is made up of roasted pumpkin, feta, onion, capsicum, spinach, rocket, parsley, garlic, chilli, salt and pepper. It’s topped with parmesan cheese. The calorie count is around 70 per mushroom - 5 grams of protein, 4 grams of fat, 3 grams of carbs. Served with fresh garden salad it makes for a healthy, tasty, vegetarian dinner.

Wow, your Stuffed Mushrooms look really great! I remember a while back when shogg did what he called 'Mushroom Pizzas' or something similar, where the mushroom formed the base and there were lovely toppings - and these look very similar - you managed to find some scrumptious mushrooms.
I didn't used to like mushrooms in the past, but I have found that I have grown to enjoy them now and again. They look scrumptious.
