Vegan Brownies 🌱

I made Laura4fit brownies and here is a picture.

I thought they were a bit small but when I ate one they are very rich, so you couldn’t eat too many and they are healthy. I think they would be great with a coffee πŸ™‚ or chopped up into smaller squares and served as little chocolates. Thank you for the idea. Taste great for so little ingredients πŸ‘πŸŒ±

Ingredients:

4 dates 100 kl

1+1/2 walnuts 60 Kl

2 tbs cocoa powder 25 kl (+extra cocoa)

1 teasp water

Steps:

Put all in a mixer and mix until uniform. Place a tiny layer of cocoa powder on a baking sheet and then put mix on top with a spoon (consistence is quite dense) and spread it into a big square. Cover this with a thin layer of cocoa powder. In fridge for 2 hours, then cut in 4... Amazing brownies!!!

Kl tot= 185/4= 47 kl per Drownie

Thank you Laura for giving me the recipe. Next on my list to try as I love brownies and raw fruit bars. If you ever fancy making raw fruit bars Shanibars are my favourite ones but I double up the recipe to get 18 bars are the 42g to 48g size, they are delicious.

Most of the time I make my own nut butter and have used Peanut, Cashew and Almond Nut butters in this recipe. I also add a little water whilst processing the ingredients.

Ingredients

β€’ 1 cup chopped dates (I use Medjool dates)

β€’ 3/4 cup peanut butter (you can use any nut butter)

β€’ 1/2 cup flaked coconut

β€’ 3 tablespoons unsweetened cacao powder

β€’ 1 pinch salt (optional) - I don't add any salt

Directions

1. Place the dates, peanut butter, coconut, cocoa powder and salt into a food processor. Cover, and blend until smooth, about 4 minutes. The mixture will be very sticky.

2. Press the mixture into a loaf pan lined with waxed paper. Refrigerate for 30 minutes. Remove the chilled mixture from the pan and slice into 6 bars. Wrap each bar in foil and refrigerate until serving.

Note: I make this recipe twice and then mix together (if you have a small food processor like me the amount of ingredients when doubling up the recipe is too much for the processor). I use a square pan and line with cling film as I found a loaf pan a very awkward shape hence doubling the recipe. The approximate size of the square pan I use is 7”x7”. I also tend to put 3 large tablespoons of cacoa powder in (you will see the recipe calls for cocoa but I much prefer the richness of the cacoa powder).

I buy my cacoa powder in Grape Tree.
