Jerusalem artichokes are in town and full of Inulin … which is super good for your gut bacteria . They are knobbly but just need a wash, don't peal and boil up with onions and a carrot for soup . liquidise well . Or wash and roast in the oven with other veg.

They definitely need to be treated with caution. They gave me terrible indigestion, which lasted for a few days. Only eat a small portion at first to see how your body reacts to them.
I tried a recipe once for Artichoke soup - and I found it had quite a powerful effect on me - similar to what Penel and MTCee suggested. I am therefore a bit cautious about using them in a soup.
I haven't tried them roasted in the oven - I might do that. But overall I don't think I'm so keen on their taste. I'm glad you enjoy them though!
They are very delicious: slightly nutty flavour and so easy to grow in the U.K. Put one in the ground and they will just keep on coming year after year: no need to do anything else. The above advice about introduce slowly into your diet is very true. If making a soup for 2 - 4 I would use just one artichoke.
