Hi Martian1

When you say 'King Salmon' - what do you mean? I think that fishmongers are often really good sellers of Salmon. Most supermarkets seem to have a fishmonger on site, to discuss a good Salmon source to meet your requirements.

King Salmon is the top desired species because of the high Omega fatty content. 8 yrs ago I purchased KS bellies for $6.99. Today they are as high as 20.00 per lb. The fisherman eat these because they know what the best part of the best fish is. Reg filets just look better and fuller to consumer consumption. Also the fishes collars are also a secret. All smoked and honey brined.

Thanks for explaining - and I think maybe a fishmonger would be a good person to consult about it. Maybe someone will reply with some ideas as well.
