I'm really envious. I've never mastered the knack of creating a really authentic curry, either Indian or Chinese, and too many spices/herbs have been wasted on some pretty awful concoctions.

So I relied on delicious take-aways from a local Chinese restaurant for about 20 years 'til they retired and, alas, haven't had a decent curry ever since. I've tried various highly recommended restaurants but been either underwhelmed or disgusted.

The supermarket sauces fall short of anything authentic......unless you know something I don't. Any tips ? 🥴

Dice one onion and chop 3-6 chillis depending on the strength you want. I use 6 for the authentic madras strength, 8-10 to take you into realms of vindaloo. Gently fry in a frying pan with 6 cloves of garlic. Add three teaspoons of cumin, three of garam massala, three of ginger and three of turmeric. To be honest the three teaspoon rule is a rough guide and I just sling in plenty. Gently fry for five minutes then put the mix into a blender with a jar of tomato passata and blend the hell out of it (technical term) Sauce made.

And that's it really. I then add chicken, about 4 breasts (or your meat of choice) potatoes, sliced leaks, some peas, a diced pepper and whatever I feel like chucking in it. if there is too little sauce for your taste after you've added the ingredients to it, add a dash of water.

One curry made. And you'll find you'll adjust the recipe to cater for your taste every time you make it. Let me know how you get on...

Like many things her tastes will change as she gets older - it did with my two.

Although one thing never changes "Ddaaaaaaaddd" but what follows gets more expensive.

Ddaaaaaaaddd, I need some money to go out with my friends

Ddaaaaaaaddd, my cars needs petrol, tyres, mot, insurance or I think I broke the car ....

Ddaaaaaaaddd, i need to get a flat, haven't got money for the deposit, furniture ........

and so many, many more .........
