Hi Jojo, Yes buckwheat is part of the rhubarb family. It is quite a fine flour and is a little strong in taste and so is often preferred to add with other gluten free flours. It rises quite well (remember that it is plain) if you use gluten free baking powder but add at least a half teaspoonful more than indicated on the tub for it to rise more lightly.
Just to advise that I had been waiting for a local shop to get some Doves Farm Buckwheat flour in stock.
A few weeks ago it arrived but the shopkeeper informed me that it wasnt gluten free. Luckily he had read the back of the packet and said it was unusual as it was always gluten free before.
I have just read on a coeliac facebook page that Doves farm had some issues with their buckwheat flour recently, due to cross contamination, so it would be wise to look on the label if you buy the Doves Farm brand.
Infinity flours make a gf buckwheat flour, unfortunately it's more expensive than Doves. I'm hoping the next harvest will be ok and not contaminated.
