I've done it, baked a gluten free loaf!!!!

As bread goes........ i am keeping it to build an extension on the house.What did i do wrong? Everything i expect, i'm not really a good cook i loose concentration half way through!

lol, sorry suecee, its not you it just seems to be thats how GF bread is, when i made some it was so hard that my knife wouldnt cut through it lol, I GAVE UP!

Well with the new planning rules you won't need planning permission and can have your own gf extension...

I make all my own bread and an easy way to start is with flat breads and then as you get more confident you can be more adventurous. I actually like making bread more than anything else and here's a picture of some of mine made with mostly ground rice, and if I can do it so can you, so don't give up.

Just after I had been diagnosed I saw a program on tv about desert nomads and they made camp in the middle of the desert and made flat breads with just millet and water in a tagine over an open fire and I thought well if they can do that, what can I achieve in my kitchen.

Hi Jerry, just thought i would let you know, i tried flat breads this afternoon and the bread block extension now has flat bread tiles to go on the roof!!! Never mind will keep on trying.

Remember you cannot bake many items including bread without gluten even if it’s 20ppm from Doves farm, or the gluten substitute

“ Hydroxypropylmethylcellulose” which does make it really gluten free.

How good is Dove's farm flour when making bread? I want to give it a go this weekend

Very nice flour and easy to work with. Strongly recommend it as a source of flour. Made pancakes, also bread and use it to thicken sauces/soups/gravy with.

Hi HJA, The Doves farm bread mix works fine as it's a blend of gf flours with xanthan gum added so just follow the instructions on the pack and the amount of water is critical so measure carefully. The other thing to be mindful of is the yeast as many quick acting yeasts contain wheat, so I always use the ordinary yeast and add it to warm water with a tea spoon of sugar and leave for 10 mins to let the yeast wake up. It goes frothy so you know it's ready to use. I used to use Doves farm before making my own mixes so it works fine.

Thanks Jerry, I've impressed with Doves farm in cakes, so will definately be making the bread now thanks. I wouldn't have even checked the yeast, yikes! I have so much to learn.

I ve tried all sorts and not made any decent bread yet its not just you Suecee Even the birds reject mine

I'll add my name to this list. I tried making some bread last week (the recipe contains whole grain flours plus ground almonds) and while it was okay, it was very dense and chewy. I didn't expect it to be light and fluffy by any means - it was more of an artisanal wholemeal loaf, like what you might have with pate - but it was just a little too chewy even for that. I might give half of it over to breadcrumbs for the freezer and see if I can incorporate the rest into some kind of recipe.

Suecee, I consider myself to be quite a good cook and better than average baker, so it isn't just down to skill or confidence. I think gf bread is the last frontier.

I couldn't lift mine out of the oven, as for cutting it even the hacksaw wouldn't go through it. the flat bread yesterday was awful, it had the consistancy of cardboard, i did try a nibble but couldn't swallow it lol

I will help you build a small town!!! my attempts at bread are the same, hard as blocks, I followed all the instuctions and used the correct setting on the breadmaker--I could buy a conservatory with the money I used on ingredients

I know ingredients are so expensive when you have to chuck em lol

My wife bakes my bread for me using juvela white mix,she just follows the recipe on the back of the box and it turns out great.Has to be eaten pretty quickly though because it doesnt keep well.Although it can be frozen.

Well I am sorry your bread didn't turn out well Suecee. Another approach is to make rolls in a deep muffin dish as they cook quicker and you can experiment with smaller quantities.

Here's a few things to bear in mind, Xanthan gum used in gf bread making is very hydroscopic (so it absorbs a lot of moisture) so when you make your bread mix you want it to look more like a thick batter than a stiff dough or you will end up with a dry brick like structure.

Also you could try baking for a shorter time and on a lower heat I use 150C for approx 25 mins for a loaf and 15/20 mins for rolls depending on how crusty I want them.

And bread makers unless they have a gf setting knock the dough back to remove any air bubbles and gf bread mix does NOT rise a 2nd time so must not be knocked back. I use a food processor and just whizz everything up and know what consistency I want and add more flour or water to tweak it if need be.

It depends on where you live but another member of GFG is Adriana who wrote the gluten free4kids cook book and Adriana teaches bread making usually at the Miele centre and you would soon regain the initial cost with being able to bake your own bread.

As you have all found..bread isnt easy. I dont bother...cant be bothered with the waste..and the frustration....

So I eat other things that do work well....Yorkshire puds..short pastry....(various recipes). choux...etc...(dont tell the diabetic nurse..) I am being good at the moment...

I am having some work done in garden...I need flat stones....can I put an order in??

Seems a shame that as we work well as a team (!!)..that I cant encourage you all to eat buns and cakes on my behalf??

Am seing diabetic team on Thursday and am trying to be good until then...Thursday at 5...may well be another matter....

i have tried every type of gf flour mix, used eggs oil you name it i've tried it....and it still ends up like a brick.....and this is coming from someone who worked in a bakery for years...i now make a gf scone mix...to which i can add anything i fancy cheese, tomotoe, olives and have that instead....it took a few goes before i got the mixture right for a decent sponge cake, only thing i found with pastry made with corn, potatoe, and rice flour flour is that you only get to roll it out once before it crumbles.....i can live with that....
