I feel it is important to keep using your brain, challenging your self to learn or get interested in new things. This certainly helps my mind to stay sharp. Also, good general nutrition, in your case avoiding gluten, in mine wheat, which apart from digestive symptoms, gives me horrendous brain fog where I just can't think straight.
For me, it’s a case of keeping as active as possible…..dog walks, gardening, holidays etc., making sure I have a varied healthy diet, read lots, do lots of puzzle games, do lots of creative writing, spend time with good friends and family, keep learning, keep exploring.
Not sure if I'm reading your comment correctly, but are you implying coeliac is contributing to cognitive decline?

Supplements like Antioxidants I find help like glutathione, α-Linolenic acid, Lion’s mane for neuronal plasticity, (easier to learn new things) vitamin Bs. Please note I’ve SIBO/SIAO so absorption from food an issue. Plus, limited diet.
anthocyanins may be useful.

Anthocyanin is found in purple fruits like blueberries.
