I need to up my calcium intake, but haven't had sardines on toast since I was a child. I can't remember if you put the sardines on the toast, and then under the grill (like cheese), or if you eat them cold on the toast? I do remember that when I was old enough to make my own that I used to take the bones out. Funny what you remember, and what you don't.

Toast first then add sardines 😋
Though sounds like it would work either way if you want the sardines hot never thought of that!
I mash the sardines, bones and all, add a little lemon juice, salt and pepper and spread them on hot toast to make a full sandwich, or two open faced sandwiches.

Lemon & pepper sounds like an excellent idea. I wish we didn't need the bones, but we do.
Toast the bread, put the sardines on, mash in the bones, and under the grill again would be my take on this. Sesame seeds/tahini also good for calcium.
