How does one actually get a fatty liver?

Hi, from what I understand, the most common causes of fatty liver are a high carbohydrate diet (lots of sugar and processed starchy food) combined with lack of exercise, but it's not that simple!

Some people just get fatty liver because they have a genetic predisposition. But rates of fatty liver are highest in people with diabetes and obesity, so you can see the connection with diet.

Some researchers believe it is the modern diet and access to fast food that is a problem. Others point to high fructose corn syrup being added to everything that is a problem. Corn syrup was added to a lot of "low fat" food that was manufactured to have a "low fat" or "light" label, because low fat food can actually taste pretty bad. So now researchers are finding that the added sugar actually seems to be worse than the fat in some cases, because your body turns the sugar into fat and stores it in the liver.

So following a diet suitable for type 2 diabetes seems to be helpful for fatty liver. Avoid sugar and refined foods, and avoid large portions that overload the system. Avoiding the causes gives you the best chance to stop it getting worse and turning it around.
