Homemade Cashew Nut Butter

Hi everyone,

As it's World Food Day, here's how to make raw cashew nut butter with just cashew nuts so no added sugar, just cashew nuts.

All I did was roast some cashew nuts and then after they'd cooled, I put them in a grinder and whizzed then into a paste. It is silky smooth and cashew nuts contain lots of important vital elements like calcium, magnesium and iron as well as vitamin E and more.

Nuts and cashew nuts are great for diabetics, so here's a couple of links:

The reason I posted this on here is some commercial cashew nut butters especially the low fat ones use sugar and this is made with just cashew nuts.

A diabetic can eat cashew nuts as long as the they are within the daily carb allowance which may vary from person to person.

Raw cashew nuts have about 27 gm of net carb per 100 gm. Moderation is the key here. There are other nuts which have lower net carb. Here are some lower carb nuts- net carb per 100 gm raw.

1. Pecan: 4

2. Brazil nut: 4

3. Macadamia: 5

4. Walnut: 7

5. Peanut: 7

6. Almond: 10

Decide the quantity such that you do not exceed the daily carb allowance. As such all the above nuts have low GI.
