I am clueless as to what pace etc should be doing - going up/down. Have attached a pic of logged runs so far. Can anyone advise? Thanks x

On Saturday your pace was faster than any previous run and was also your furthest distance. So pace goes down the more you run faster.
At this stage pace doesn’t matter, it’s more to do with running continuously for 30 mins. Most don’t reach 5k in the 9 weeks.
Hope that helps a bit. Someone more technical minded will fill you in further I’m sure 😀

They look very inconsistent? Do some of these include warm ups and cool downs and others not?

As explained in the guide to the plan, the recommended pace for C25k is one at which you can speak aloud, clear, ungasping sentences as you run.

Hey! I don't track the 5mins before and after as otherwise it ruins your pace. My pace is usually around 7.30 and I manage 5k in about 39mins. I'm happy with that at the mo as still find running dead hard, maybe when it feels easier I may try to up the pace 👌😀 x
