Not sure if it's because I've changed shoes (to a wider-toed, more natural shaped pair) or because I've just completed Week 8 Run 1 (a sweaty struggle) but my calves are really sore. Should I do my W8R2 today or have another day or two of rest??

Having an extra days rest will do no harm.
New shoes can support you differently and create tensions, which is why I always alternate my new shoes with old ones for a while to break in both shoes and feet.
Stretching immediately after every run, nhs.uk/live-well/exercise/h... while muscles are still warm and supple, pulls out contractions, avoiding carrying tensions into the next run and also improves recovery by improving blood flow.
