I’ve been really enjoying the C25K app completed week 5 and felt amazing completing a 20 min run however due to one thing or another I haven’t ran in 3 weeks, unsure of how to get back into it and which week to start on

Life can get in the way! I’d start W5 again and see how you do. Don’t be hard on yourself, take it nice and slow, not just because of the break, but the heat. Build up again to the lovely end of w5 and carry on from there.
I run using this Japanese slow jogging technique, and absolutely love it. It can be a very useful style of running to learn, as it’s low impact it can help you back in after a break, great in the heat, and good for when a run is not going well - just slow right down & enjoy. There’s a few tricks to it and then if you think you’re a slow runner already it is worth doing this right. I run this way all the time as it makes the running pleasurable while you’re doing it!

Take a run outside of the programme. Get out there and just go for a run. See how far you get with no expectations. Depending on your progress you will know where you need to restart you C25k journey.
You might just surprise yourself
