As my last post, I am a new runner having recently completed week one, now onto two!
What do people suggest when it comes to rest days? For my first week, I normally have 2 or 3 days between runs. My last run was Tuesday night, however I’m feeling fine, is a one day rest to quick?

I generally take two rest days after completing a week.
When talking about rest days, it means a rest from running, so you are free to do any other exercise you like, but keep it low impact. Such as swimming, cycling, cross trainer, etc.
You may well benefit from some upper body work and improving core strength.
I’m starting my W5 tomorrow. I take 2 days break from running before starting the new week, but keep doing my stretches and specially keep focus on keeping myself hydrated. I found it helpful during the week when I’m running.
