Can I eat/drink Kumbucha if it isn't pasturiezed?

I was encouraged to drink green tea and Kumbucha.... if not paturized... does it work? Should I take things that are unpasturized? I have diverticulitis right now... any suggestions? On W&W for two years.

"The fermentation process is important, as the SCOBY changes the polyphenols – compounds normally found in tea, fruits and vegetables – into other organic compounds. This increases the acidity, which prevents other micro-organisms growing.

It is these new organic compounds that are claimed to provide health benefits beyond those already found in green or black tea.

Based on the current evidence, we can say the health properties of kombucha are likely to be similar to drinking tea or other fermented foods. If you enjoy kombucha, continue drinking it, but if you favour the traditional black and green tea, there are good health reasons to continue drinking those."

Note that this is not specifically written for immune compromised drinkers of kombucha tea. Given it is brewed between 20 - 28C (68 - 82F), I'd be concerned at how well the brewing process can be maintained in a home environment to ensure a safe brew, particularly if you don’t have constant air conditioning. (it needs to be sufficiently acidic to prevent bacterial growth.) Perhaps just enjoy green tea? I don't know whether kombucha tea adds to the possible benefits of EGCG from green tea for CLL, but you have to consume 4 grams of EGCG per day per the Mayo Clinic trial to see a possible benefit and that's a lot of drinking. You'd need to have about 14 batches concurrently being brewed, starting a new one each day!

Are you currently drinking the kambucha and it's not bothering you? Are you considering it for improving your diverticulitis or your cll? Are you drinking store bought packaged kambucha or your own brew? Who is recommending it, your doctor? If not have you discussed it with him/her?

Just some factors to consider.

I drink 4 to 8 oz. everyday and on days of infusion I drink 16oz. No special reason but by drinking that much I don’t get hungry...I don’t like eating during infusion. I drink only the store bought version and have quick making my own. I drink it to help keep my body alkaline. 🙏☘️💕

Your body has a whole range of processes to carefully maintain different parts of your body in a range of states from slightly alkaline to extremely acid. Your body will just adjust your urine, sweat and breath accordingly to maintain those states, irrespective of what you eat or drink:

Thanks to all of you, Neil, Guy, Panz... I've never tried it but homeo gal was encouraging me... have diverticulitis... first time... and wondered if helpful.. I like knowing now that I can get it in the store, rather than make (and maybe do myself in). Think the divertic is under control now.. taking probiotics... Green tea...
