Ideally you shouldn't have any fat build up in the liver but if you do then it's considered fatty liver disease. It's good that you have normal bloods as hopefully that indicates there is no ongoing inflammation. It looks like you have started making good and positive lifestyle changes which may hopefully prevent any progress and even reduce the fat build up in your liver.

Same here. The average GP and I have seen plenty over the past 56 years, knows the least out of dentists, opticians and chemists. My Liver is most likely faulty from birth. They could have done something in my twenties or before.
apparently fat levels over 5 % can lead to a FLD diagnosis.
You need a fibroscan to get some actual measurements of where you liver is at
