I think you might find it nearly impossible as the risks are just too great.
If you were to suffer a bleed midflight due to changes in cabin pressure and the plane had to divert to make an emergency landing, all the remaining passengers could sue the airline for the inconvenience caused. Also, medical treatment in Europe can be expensive and has to be paid for at the point of admission.
If you were able to find an insurance company, you might find that cost of the policy outweighs the cost of the holiday.
I would put your holiday on hold for a while until you get the all-clear and are fit to travel from the specialist liver consultant.
I have cirrhosis but no varices (yet), and I got travel insurance from Staysure. It costs me £32/month for an annual policy. Travel is restricted to Europe so I’m not sure if that include the canaries. Avanti are also good. Best of luck.

It's the varices that will cause insurance issues and health safety issues. You need to get a doctor to assess you as 'fit to fly'.

This doesn't negate the need for insurance too.
We had a guy on here in the past who flew with (unknown) varices. They burst mid-flight requiring an emergency landing and admission to hospital. He was held liable for the costs of landing, delayed flights and for the costs of other passengers who missed connections.

Staysure offered best quote for me. I think might be worth looking at cruise leaving from uk to maybe somewhere in Mediterranean? That would avoid flying increased risk. Just a thought
