I contacted Garmin about the problem and apparently it is a software problem which they now tell me is fixed, I've pasted part of Garmin's reply below:
"This has now been resolved via a backend update. This will only apply to newly uploaded activities. If wanting to have the VO2 Max readings from previous activities to display in the reports then you will need to re-upload the activity into your account".
Thanks for following this up OG - I haven't run since my last post due to a heavy cold but am hoping to do parkrun tomorrow and look forward to an updated vo2 max!
Well I can confirm it is now fixed, I went for a run this morning and my previously stuck V02 Max has moved up to 42 from 41 which it had been stuck at since 1st December.
