There's been lots written about various breathing techniques but I think sometimes we can over worry about this and then this makes us more anxious! I just breathe normally and forget about it.
Maybe you're running too fast and/or the hill is a big one! Try slowing down and get to a pace where you can sing or talk to yourself without gasping. If you can't do this then you're running too quickly. Although you can expect to get out of breath running up hills, that's normal.

I am with IP on this. Slow down so that you could have a chat to someone running alongside you. Really steep hills require specific practice (like repeatedly running up and down them or part way up, instead of a normal run)and require more general fitness than most of us bring to C25K. For now, I would avoid them or walk up😊
