Recently I was diagnosed with HSV -2 . I had covid in June 2020. I am currently on valtrex. I am concerned that by getting the vaccine will cause me not to build up enough immunity to Covid because of the valtrex. Any thoughts will be greatly appreciated. Thank you.

There is absolutely no link between taking valaciclovir and getting COVID immunity from a vaccine. Even if you had COVID you should still receive the vaccine. And taker the valaciclovir for the hsv 2 - I presume you have/had genital symptoms.
