Getting in early for the rumoured Fish Off.

˜100g raw salmon (sushi quality or previously industrially frozen)

1 small avocado

1 large tomato

Chilli (I used a jalapeño, crushed chilli is a good store cupboard alternative)

1 fistful of coriander.

Chop the coriander and chilli, and dice all the other ingredients, then toss in lemon or lime juice.

If you wait a few minutes, the acid will cook the salmon, a la ceviche, or if you like sashimi, eat immediately.

(this is my my unique creation, based on a similar tuna dish)

Edited to spell ceviche correctly!
