This is not the easiest meal to make as it requires a bit of effort grinding the seeds, chopping the squash and the recipe isn't spot on (you have to add the ingredients to taste). But nonetheless, it's super healthy and very tasty if you like this sort of thing! Enjoy
And I am in awe that you don’t even have to peel the squash, because that’s a thing that takes me ages! What is the texture of the skin in the finished dish?
I've actually never cooked it with the skin on. I find it pretty easy to get the skin off with a decent potato peeler and the right angle and pressure. Dicing it is what takes me forever.
I just have a cheap one but it's the Y style frame rather that the knife style peeler. Unless you have limited mobility you should be able to get the hang of it.. Just lay it flat on a steady surface, keep your fingers out of the way and try long downwards strokes with plenty of pressure, turning as you go.

I definitely love colour at meal times. I remember watching this health programme years back (I think it was 'you are what you eat' :/) where they filled a massive table full of brown foods and drinks.. Tea, coffee, crisps, bread, biscuits, chips etc, and then another table full of fresh fruits and vegetables - the veg table looked so attractive and really got me thinking about what I wanted.
I'd love to be able to show you the image but can't find anything quite like it.. It was a very powerful image that always stuck with me and was partly responsible for shaping the way I look at food
