I have a few friends coming round for lunch today so I'm cooking one of my absolute favourite things: okra! I've had this lot chopped and out on the side drying since yesterday to get rid of the sticky glueyness and will be starting to cook it all in an hour or so.
I'm making the fenugreek, tomato, and okra curry from "Prashad's Indian Vegetarian Cookery", my favourite cookbook. One of these days I'm going to have to visit Bradford so I can go to the Prashad restaurant there.
There is 800g of okra in this recipe, which feeds four people. And okra has 7g of carbs and 33 calories per 100g so pretty good on both counts ๐.

I really like your Okra photo - I haven't used Okra in a recipe before, but I am going to consider doing so now. Looks great. Hope you have a lovely lunch with your friends today.
I've always avoided okra because of the gloopiness of it. I didn't know about drying it. Your dish sounds very tasty (I believe you that the okra will be ok )
I've always been too scared of okra to buy it and cook with it (because of its reputation as being difficult). Now you've said how to prep it I'm going to give it a whirl.
Itโs a bit of a hassle having to plan 24 hours in advance (thatโs how long the book says to leave it out to dry) so Iโm not usually organised enough to cook it, but when I do itโs totally worth it!
I've learnt to eat a lot of different foods since coming here. I started eating celery before xmas, which I always thought I never would and now I actually like the taste of it in my salads. I'm trying to never say never.
So that's what you do to stop the slimyness! Thank you Rsslldphy, I love the taste of okra but hated the texture - I'll be able to try some interesting recipes now.
