Hi guys and happy Friday!

Please can someone help me, I really like poached eggs but simply cannot seem to cook them successfully myself, I have tried them a mug in the microwave, they explode. I have tried them in a pan of water with the water swirling around they still spread out into an eggy "ghost" in the water. I tried and egg poacher but the water got too hot and poaching cups ended up floating out of the pan.

Any tips you can offer would be very gratefully received.

You sound like me with regards to poached eggs! lol I have done all the things you say and I still end up with a eggie mess so your not alone. Sorry I'm not any help!

Why not go into the Daily Diary and ask them there are I know a lot of the regulars like cooking eggs.

Bring water in a small pan to a rolling boil. Crack eggs in a small bowl.

Once water is boiling hard, stir fast with a spatula to create a strong vortex in the middle, like a whirlpool. Quickly pour the eggs into the centre of the vortex, remove the pan from the heat and put a lid on the pan.

Leave covered, off the heat for 3 minutes. Remove the eggs with a slatted spoon. Voila!

If you want restaurant style presentation, crack the eggs first into a sieve, alowig any stringy bits of white to sift through. This will result in a neater poached egg but has no bearing on the taste so i never bother with this.

Serve immediately with a pinch of salt and a grind of black pepper on toast spread with avocado. If your macros do not allow for toast, try a slice of grilled aubergine instead.

Oh wow thanks so much for your response, i will give that a go at the weekend - well that is of course if I can buy any eggs in the supermarket :)

Do try that method, once you get the hang of sliding your eggs in before the swirl ends you will have lovely eggs.
