Anyone who makes kimchi?

Made some but not ready yet. Thought it was a good way to get some spicy filling veg. Anyone else making and eating? Fermented food improves overall health, but kimchi is a new venture for me. I'd love to hear your feedback. 🌸

Never made it but I do like the sound of it, I love sauerkraut which I believe is similar?

I'm a fan of most pickles, but usually as an accompany to something like a huge slice of cheese. So challenging to leave the cheese alone. Also a fan of spicy food (curries probably my favourite and my personal achilles heel with the amount of calories in a takeaway).. . So hoping the kimchi is a good substitute to getting the spice fix.

I've not, as yet. However, I keep meaning to buy some. I read a few months back, in H&B health magazine, how fermented foods were set to increase in popularity throughout 2017, due to their ability to increase the diversity of healthy bacteria in the gut.

True to form, I think the magazine article was pretty much spot on, since others on the forum have posted threads about Kefir in recent months.

Since you appear to be our Kimchi guinea pig, you can try it first and let us know how it tastes once ready.

Equally, also consider pickles, sauerkraut, miso paste and tempeh, since they're all fermented foods

Grannybwell I've mentioned this before but it's worth putting up again. If you are on FB there is a wonderful group called "UK Fermenting Friends" they are so helpful - definitely worth joining if you're on FB. My hubby is the fermenter in the house - milk kefir, kefir cheese, kombucha, sauerkraut and apple cider vinegar - our house looks like a chemistry lab! We like kimchi but so far have not made our own.

Grannybwell if you decide to make kefir (milk or water) or kombucha then the FB group has a list of people who will sent out grains for the price of P&P (UK). We're in France so I got ours on French ebay.
