Hi everyone, hope your weekend went well . I lost 1 1/2 pounds last week so very pleased thing are still working well for me. I have 8 weeks left before I hopefully reach my target and although I have slowed down with my weight loss weekly, I feel very positive that I can still achieve my target. I found a lovely recipe for a quiche . No pastry. 2 LEEKS 2 courgettes, chopped into small pieces, 3 rashers of bacon , fat removed. Using coconut spray oil, or any other low fat spray oil, fry bacon,leeks,& courgettes until soft. Then mix together separately 40 gram of low fat cottage cheese with 2 beaten eggs, and season. Place leeks etc. when soft into a quiche dish, pour over the cottage cheese mixture, sprinkle on a good helping of low fat grated cheese on top . Place in the middle of the oven and cook until light golden brown. This is so quick and easy and delicious. About 400 cals . per portion. mmmmm! Well worth a try. Hope you all have a successful week.

Congratulations on losing 1.5 pounds this week, that is really great! Glad things are still working well for you, and you've still got plenty of time to go before your target. I like the sound of your lovely recipe for no pastry quiche - sounds really delicious!
