I like to cover with a homemade tomato sauce (onion garlic herbs and tinned tomatoes) and sprinkle a mix of breadcrumbs and Parmesan and oven bake. I am not a big fan of fish but this makes it tasty and gives a nice sauce to put over new potatoes and veggies 😊
One we like is curry cauliflower rice, with flaked fish and boiled eggs. A sort of lean take on Kedgeree.
Boil your eggs.
Poach your fish, I usually add lots of smoked paprika if its white fish.
Cook your cauliflower rice with a couple of tablespoons of medium curry mix. You can add more to spice it up or less ;). The cauliflower rice usually comes in a bag for the microwave, so open, put the powdered curry in and shake it up well. Cook as per instructions.
Flake the fish in and fold in gently, cut up the boiled eggs, I like them chopped properly and folded in with the fish. If you poached in milk its nice to add that juice to the mix rather than the cream or butter with normal kedgeree.
Make enough in one go and chill for a healthy breakfast the next day or to have with some salad for a quick lunch
Great ideas above. My son loves fried fish topped with sweet n sour sauce and also in a wrap with some chopped salad and extra light mayo. I am not keen on salmon, so I tend to have it with pesto, would that be another option?
