We love quinoa!

Last night i cooked dinner for my friends, using a new recipe book I'd bought to cheer myself up after a 2 hour dental appointment, mainly because the title amused me - it's called We Love Quinoa. Turns out it was written by a friend of one of my guests, and it's brilliant! So, get it. I made the chilli black bean quinoa. Highly recommended.

Wow that was a long dental appointment! Glad you got through that!

I think Quinoa is very versatile and tasty.

I've just found some black beans in a whole food shop and cooked a batch up and frozen some portions out.. I heard about black beans off Jamie Oliver but have never been able to find them in the supermarkets!! Going to try your recipe out for sure!!

I couldn't find any. I substituted some kidney beans and some black-eyed beans (see what I did there?)! I'll go to a health food shop and have a proper look.

Recipe is this:

Fry one onion and one green pepper, chopped, in olive oil for 5 mins

Add garlic, tomato purée, chilli powder/flakes, smoked paprika, cumin, oregano and cook 2 more mins

Add 700ml stock, 200g uncooked quinoa, 1sweet potato, diced, salt, cook for 20 mins

Add 800g cooked black beans, 2 tins tomatoes, 350 sweetcorn (makes it look a bit like sick, I would leave out next time) and simmer for 15 mins

Stir in chopped fresh coriander

Serve with avocado, grated cheese, sour cream, lime wedges
