I had the sausage patties for brunch today ( didn't manage breakfast, have been a bit of a whirling dervish since getting up at 6am and only managed to eat at 11.30am). They weren't too bad at all. I cooked 2 huge flat mushrooms in 1/2tsp oil (brush them with it) and poached an egg, the sausage patty was cooked on the griddle along with a thick slice of onion. Total calories was 260 for it all. I assembled it as so:- 1 mushroom upside down on the plate, then the onion slice, the sausage patty, poached egg and lastly topped with the other mushroom. I shoved a skewer through the lot to stop it toppling over, then sat down and thoroughly enjoyed it!!!

Sausage Recipe ( for stuffing skins or to flatten into patties). Makes 10

750g ex.lean. pork. ( mince your own or buy already minced)

150g red onion and 1 garlic clove ( blitz until a sloppy mess in a blender)

1/2tsp each of celery salt, dried thyme, dried sage, ground black pepper,

1/4tsp smoked paprika.

Put the lot in a bowl and get your hands in to squelch it all well together, or if you are mincing your own pork put it all through the mincer together ( still give it a bit of a squelch after mincing though). If you are making normal sausages, attach the stuffing nozzle to your mincer, roll on the skin then run your filling through without the grind on, twist into 10 sausages and leave in fridge for at least 24 hours, then use or freeze until wanted. If your making patties, divide mix into 10 then either shape and squash by hand into rounds or use a burger press ( dirt cheap off amazon or lakeland and wax discs can be bought by the 1000 - great for stacking and storing). Put in fridge for at least 12 hours in a single layer. Grill or griddle them when wanting to cook. Frypan can be used if you want too.

If you want to make beef ones, substitute the pork for ex. lean beef mince and the sage for 1/2tsp mustard powder. Everything else is the same. 137kcals each ( uncooked )
