This evening's healthy option

Main meal of the day, pan fried salmon fillet, pasta with sun dried tomatoes and mushrooms, yellow tomato, cucumber and strawberries with balsamic vinegar ... And half a dozen grapes! Is this healthy????

That looks absolutely delicious, lovely variety of colours! All I manged was a measly boiled egg, baked beans and some sliced courgette. It was an effort to pull something together and I didn't want many carbs as I wasn't feeling hungry - until I saw your photo!

Delish!! I wish I had that!

Looks and sounds healthy enough to me - and definitely delicious! Going to try it on Thursday as that's one of our fish days. Would also work well with rice I think. Thank you for sharing. Best wishes.

Looks good but if you are trying to lose weight then remember that grapes have a huge amount of sugar in them.

Instead of the pasta you could have used zucchini peeled with a julienne peeler so that the zucchini looks like spaghetti. Mixed with your other "pasta" ingredients its a sure fire way of feeling full, tasting great without any of the extra calories that pasta brings :-)

If losing weight isn't an issue then this really looks like a varied and lovely dish!

Thank you kiwifruit1, is zucchini the same as courgette as I quite like that and may give it a go. The meal was my main meal of the day as I had a very basic salad at lunchtime so thought the pasta wouldn't be too bad.

Yep :-) You don't cook it though and if you have a hot pasta type sauce then it heats up when it goes on top or mixed in. When I am really hungry I can sometimes have a huge bowl of this "pasta" the same calories in pasta for the same size/amount would be around 450! It has been my favourite "cheat" :-)

The peeler looks like this- it has a little jagged blade instead of a smooth one like a potato peeler :

I have only recently seen them here in Sweden so before then I had to order mine from ebay.co.uk but I am sure in the UK you could prob find these easily in loads of shops :-)

The do carrots and other veggies that are firm as well :-)

In the UK you can buy a spiraliser,they are great fun and the courgette really looks like spaghetti!
